For those of you beginning life without meat with a pescatarian diet, here is a super quick and easy garlic & lemon prawn linguine for you. A combination of garlic, sweet sun-dried tomatoes, fragrant fresh basil, pesto and fresh lemon makes this dish a truly flavourful one. It’s vibrant, zesty, super tasty and so more-ish! Honestly, you’ll want another plate when you’re finished. Garlic and lemon are known to have some great health benefits too. Enjoy!

Ingredients
  1. 250g Frozen un-cooked prawns
  2. 6-8 Sundried tomatoes, roughly chopped
  3. 2 teaspoons of vegan butter
  4. 2 large cloves of garlic, crushed
  5. 2 teaspoons of vegetarian green pesto
  6. 8-10 cherry tomatoes, halved
  7. Juice of 1 lemon
  8. Sea Salt
  9. Black pepper
  10. Wholeweat linguine
  11. Fresh basil
  12. Vegan/Rennet-free Parmesan (optional)
Instructions
  1. Using the packet instructions, begin to cook enough linguine for two people. This will take roughly 10-12 minutes.
  2. Meanwhile, prepare your sundried tomatoes and garlic. Then in a large pan, fry the garlic and sundried tomatoes with the butter on a medium to high heat for a few moments until the aromas of garlic are released.
  3. Add the frozen prawns, pesto, lemon juice (minding the pips), a pinch of sea salt and a grinding of black pepper.
  4. Reduce the heat and cook until the prawns done (roughly 7 minutes). Add the cherry tomatoes 5 minutes in then a splash of the starchy linguine water for extra flavour.
  5. Once the linguine is cooked, drain it and toss it in among the prawns and other ingredients.
  6. Serve immediately with fresh basil leaves and sprinkling of parmesan cheese if desired. Enjoy!
