Beetroot Brownies?! Yes, you read correctly. You may think putting a vegetable in a desert recipe is a little odd but it’s the Beetroot which makes these brownies the deliciously gooey, melt-in-your mouth type they are; and boy are they good! Energy-boosting coffee and zesty orange are well-known compliments to chocolate in the world of food and drink, and their flavours add a nice twist to this recipe. Rich, chocolatey and earthy, these brownies are great company when you’re in need of a little self-indulgence and ‘pick-me-up.’ But be warned, one bite will keep you drooling for days… Enjoy!

Ingredients
  1. 200g raw Beetroot, peeled and finely grated
  2. The zest of 2 oranges
  3. 200g 70% dark chocolate
  4. 200g unsalted butter
  5. 2 teaspoons of instant coffee
  6. 400g caster sugar
  7. 4 medium eggs, beaten
  8. 50g cocoa powder
  9. 50g plain flour
  10. Pinch of salt
Instructions
  1. Pre-heat oven to 180C/160C fan/ gas mark 4; and line 12” x 9” rectangular baking tin with baking parchment paper.
  2. Prepare the beetroot and orange zest. Preparing the beetroot gets messy – so you can use rubber gloves if you wish! Peel and finely grate your beetroot. Then finely grate the zest of two sweet clementine oranges.
  3. Melt the chocolate, butter, and instant coffee over a low heat and then stir in the orange zest. Remove from the heat and thoroughly stir in the beetroot, caster sugar and beaten egg. Then stir in the cocoa powder, flour and salt, ensuring the ingredients are well combined.
  4. Pour the mixture into the prepared baking tin and bake in the oven for 30 minutes until just cooked. The top should be dried to a paler brown and the centre of the brownies should retain some dark, dense and gooey moisture. The brownie will continue to cook whilst it cools in the tin – allow the cooling process to complete before slicing into bitesize pieces or whichever way you wish.
  5. Serve with a coffee or some ice cream and enjoy!

  1. This recipe uses a non-stick 12”(L) x 9”(W) x 2”(D) baking tin.
